Spinach and Feta Pasta


So I made this as well for the weekend and it was cool...... Lol I think I'm just use to more flavor in my pasta.  So I am thinking about putting a pesto mix with it.  I will have to let you know how many points it goes up after that.

Ingredients
2 tsp olive oil (garlic flavor. If you don't have this add 1 tsp minced garlic to plain olive oil)

1/2 tsp Salt

Red pepper flakes, to taste (optional)

1/2 cup feta cheese, crumbled or chunk

4 cups whole wheat pasta, any shape

1 package grape tomatoes (sliced in halves)

2 packages pre-washed, fresh spinach


Instructions
Boil water and cook pasta according to instructions. Set aside.

Heat Olive Oil and garlic in a large skillet.

Add both packages of spinach and saute until wilted, about 4 minutes. You might need to do this in batches as spinach is high volume before it wilts. Add salt.

Add tomatoes and saute for a few minutes.

Drain mixture best you can and transfer to a serving bowl. Mix in feta cheese.

Serve over pasta. Serving size is 1 cup pasta and 3/4 cup spinach mixture.

Add more salt, to taste, and chili flakes, if desired.

Special Notes
This can be enjoyed the next day hot or cold with pasta.

To save 3 points per serving, omit pasta and enjoy alone. It is 2 points per serving and can also be added to an omelette or over brown rice.
