239 stairs.....


This right here is Mt. Pisgah...... 239 stairs!  And do you know, how I know about Mt. Pisgah?!  Well I ran, jumped, and lunged every 239 stairs of it 3 TIMES!!!! for the aerobics class I took tonight.  WOW!  I mean I feel great now but while I was doing it, I thought I was going to die lol.  Anyways, do you want to see the reward after I finished this INTENSE workout?!

My beach workout



Isn't that a beautiful picture!!!!!  Well freaking I had to run down those stairs and run on that beach for this workout class I did today lol.  My first time visiting the beach since I moved here and I don't have a lovely, leisurley memory of it nope!!!!  My memory of my first visit on the beach is me running in the sand, doing lunges, bear crawls, crab walks, sprints.  OH MY GOODNESS!!!!  I have never had this type of workout in my life!!!!!  I think afterwards I was walking really slow and right now my body hurts so bad!!!!!  But you know what, I am going to do it all over again tomorrow!!!!  No Pain, No Gain lol.

This new gym I joined her is FABULOUS!  Its an all women's gym and everyone is so friendly and nice.  I am taking almost all of their classes and let me tell you they are challenging and fun.  Yesterday I took the zumba class and she played my fav song!!!!  Proud Mary!!!  And we basically did the whole routine to it.  It took all my energy not to let my inner Tina Turner come out lol.

My goodies from the Farmers Market

Sooooooooooo I tried to do something with my goodies I got from the Farmers Market.  I tried this Weight Watcher Recipe where you roast the veggies and then put it in an omelet......  So the omelet part didn't turn out to be an omelet lol.  I made it into a yummy scramble.  I only put half of my roasted veggies with the eggs because I am saving the other veggies for my tilapia and black beans I'm going to make later this week.  Here are some pics of my creations:










The Recipe: 

This is only 2 weight watcher points!!!

  • 1 medium zucchini, diced 
  • 1 medium yellow summer squash, diced 
  • 1 medium green pepper(s), seeded and diced 
  • 1 medium potato(es), diced 
  • 1 medium tomato(es), diced 
  • 1 medium onion(s), diced 
  • 1 Tbsp rosemary, fresh, chopped 
  • 1/2 tsp table salt 
  • 1/2 tsp black pepper, freshly ground 
  • 6 large egg white(s), lightly beaten 
  • 1/4 cup(s) light cream cheese, with herbs, cubed 

  • Arrange one rack on the bottom rung of the oven. Preheat the oven to 450°F. 
  • Combine the zucchini, yellow squash, bell pepper, potato, tomato, onion, rosemary, salt, and pepper in a large bowl; lightly spray with olive-oil nonstick spray. Spread the vegetables in a large nonstick baking sheet. Roast, on the bottom rack of the oven, stirring occasionally, until the vegetables are tender and browned, about 25 minutes. 
  • Spray a large nonstick skillet with nonstick spray and set over medium heat. Add the egg whites and cook until just set, 3-4 minutes, lifting the edges frequently with a spatula to let the uncooked egg flow underneath. Spoon the vegetable mixture over the eggs, then sprinkle the cheese. Cover the skillet and cook until the cheese melts, 2-3 minutes. Fold the omelette in half and slide out onto a plate. Yields 1/4 of omelette per serving.

My first visit to the Farmer's Market



They are so pretty and fun!!!!  Just like me!  I had a blast at the Farmer's market, bought alot of goodies that I have to find a recipe for now lol.  

So my song selection for today is How Great is Our God.  It was playing on KLove while I was typing this and I must agree our God is something special :o).  I hope everyone is enjoying this BEAUTIFUL day!

So during the summer until mid-August Holland has Street Performances.  Today was the kids series and though it was alot of families there, I still had fun all by myself lol.  I video taped the break dancers so I'm going to try to put that up on my next post.  Gosh I can't wait till next Thursday to see the entertainment for adults lol.

So I took some pictures of my apt before they put the furniture back in.  Its so nice and beautiful!  The view from my apt of campus is perfect!  I do not have any pics of my bedroom because its a hot mess right now, I am not done unpacking yet lol.  But I promise once everything is together I will take some more pics.  Let me know what you think.

End of the Road

So today is my last day in Cleveland before I start the new chapter in my life!!!! Oh my goodness!!! I am so nervous/excited about this move. First I want to say Thank you Lord for allowing me the opportunity to get a job at a place that I know I will have growth in my professional and personal life. Like I am really blessed to have a job right after graduation because I know it is hard out here in the world. I really think that I will love my experience at Hope and Holland I'm just nervous about the unknown lol. Like will I make friends? Will they love me as a RLC? What will happen next in my life?! Oh all the unanswered questions!!!!! I think this part in my life is where I really learn how to lean not on my own understanding. Everyone I talk to keeps telling me that they see a lot of things happening in my life with this move and I say Amen to that!!!! Though I am on edge with my nerves I am still going to speak everything into existence because I know my God is an Awesome God and He would not do anything in my life that will harm me. He is only preparing me every day in every situation to be a better woman and witness for Him. Wow, just saying that really allowed me to relax!!!! Well Cleveland this may not be the "End of the road" for us but its a nice break before I see you again :o) I am off to explore my new home and take on new adventures. I will take pictures of my new apt and post it up!!!!
